The objective of this work is to assess daily intake of nitrates and nitrites among inhabitants from Beni-Mellal region and to compare it with international standards. This study is carried out in three rural areas: Fkih Ben Salah (FBS), Ouled Moussa (OM) and Souk Sebt (SS) where water supply is ensured by wells. Starting from a feed ration standard day, the daily intake of nitrates and nitrites was calculated. The results show that the daily dose of nitrates taken in the OM and SS areas largely exceed the international standard. For nitrites, the contents recorded in the three areas do not exceed the international standard. In conclusion, in Beni-Mellal region the excessive use of nitrates in manure could represent, in future, a real danger to public health
